In melissopalynology, the presence of Sulla pollen is considered an indicator of the honey’s Italian origin. Until a few years ago, unifloral Sulla honeys were produced abundantly throughout the peninsula, whereas today production is limited to the hilly areas of Abruzzo, Molise, Calabria, Sicily, and Sardinia.
Its light color (light beige when crystallized) and mild flavor and aroma (described as “honey-like” with a slight vegetal note of hay) make it highly appreciated for all uses.
Typically Italian, the plant is well-distributed in the clay soils south of the Po Valley, both wild and cultivated, and the honey is produced in hilly areas where beekeeping has been best preserved.
Its light color (especially post-crystallization), delicate aroma, and flavor make it highly appreciated as an alternative to Acacia and for all table uses.
