Honeydew is the only honey not of floral origin; it takes its name from Metcalfa pruinosa (an insect) which, feeding on plant sap, expels the sugary part that is then collected by bees.
The honey remains liquid for a long time, presenting a dark color tending toward black.
The aroma has vegetal and fruity notes, of cooked fruit, while the flavor is not very sweet, of medium intensity and reminiscent of molasses, dates or fig jam.

Honeydew honey is the only honey not of floral origin but of plant origin, as bees collect the honeydew produced by various plants when they are punctured by insects that feed on their sap.

Often sold under the name “Forest” as it is difficult to identify a single plant species, it is a honey that remains liquid for a long time, not too sweet, very dark in color, with notes reminiscent of caramel and/or malt syrup. It is often paired with savory cheeses in harmony or with spicy cheeses in contrast, or used to sweeten yogurt and beverages by those who do not prefer overly sweet honeys.
